There is no Aim Assist using mouse+keyboard, unless you install a third-party mod, which is banned by Rockstar. Saying that, you have basically two options: 1) Aim Assist + Keyboard/Mouse: only via mod; Rockstar will ban you. 2) Aim Assist + Gamepad: via GTA V settings; Rockstar won't ban you.
